Ingredients 1 cup Brown Sugar, Light 1/2 cup Sugar, Granulated 1/2 cup Cream, Heavy 4 tablespoons Butter, Unsalted 2 tablespoons Water 1 cup Pecans, Halved In a sauce pan, combine sugars, heavy cream, butter and water. Place sauce pan on medium heat and stir constantly until the mixture reaches softball stage (238⁰F – 240⁰F). Add the pecans to the mixture and remove pan from the stove. Continue to stir candy vigorously with a wooden spoon until the candy cools and the pecans are suspended. Spoon the candy out onto parchment paper or an aluminum foil-lined sheet pan. Cool completely before serving.
